- Breakfast sausage (a la Good Eats/Alton Brown):
- 2 lb pork butt
 - 1/2 lb fat back
 - 2 tsp kosher salt 
 - 1.5 tsp pepper
 - 2 tsp sage
 - 2 tsp thyme
 - 1/2 tsp rosemary
 - 1 tb light brown sugar
 - 1/2 tsp red pepper flakes
 - 1/2 tsp cayenne pepper
 - 1/2 tsp nutmeg
 
 - Put in fridge for 1 hour (mingle flavors, chill fat)
 - Wrap in butcher paper and put in fridge for up to 1 week
 - Cook on low heat
 
  - Man-made casings (collagen sausage casing)
 - Nozzle for stuffing (sausage funnel) (stuffing tube, stuffer tube)
 - What size is mine?  (2.5in = 63.5mm)
