Sausage

  • Breakfast sausage (a la Good Eats/Alton Brown):
    • 2 lb pork butt
    • 1/2 lb fat back
    • 2 tsp kosher salt
    • 1.5 tsp pepper
    • 2 tsp sage
    • 2 tsp thyme
    • 1/2 tsp rosemary
    • 1 tb light brown sugar
    • 1/2 tsp red pepper flakes
    • 1/2 tsp cayenne pepper
    • 1/2 tsp nutmeg
    1. Put in fridge for 1 hour (mingle flavors, chill fat)
    2. Wrap in butcher paper and put in fridge for up to 1 week
    3. Cook on low heat
  • Man-made casings (collagen sausage casing)
  • Nozzle for stuffing (sausage funnel) (stuffing tube, stuffer tube)
